Healthy Banana Waffles

INGREDIENTS:
1/2 cup all-purpose flour
3/4 cup whole wheat flour
3 teaspoons baking powder
1/2 teaspoon salt
1 pinch cinnamon

1 cup 1% milk (or milk substitute like coconut or almond milk)
1 egg
2 ripe bananas, mashed
1 small handful chopped walnuts, optional

DIRECTIONS:
1. | Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder, salt and cinnamon. Stir in milk, mashed bananas, and eggs until mixture is smooth. Add walnuts if desired. |
2. | Spray preheated waffle iron with non-stick cooking spray. Pour 1/2 cup of the waffle batter onto the hot waffle iron. Cook until golden brown. Serve hot. |

VW Bug Cake
This is the cake I made for a friend for her wedding. It was the groom's cake which was modeled after a car that he owns.

The top was too flat for a VW bug so I rounded it out using frosting and pieces of cake I had cut off the bottom. |
This is after I laid the fondant down. It's not perfectly smooth at the back, I had a hard time covering the odd shape. |
This is the final project. I think it turned out well overall. |

A Hamburger Today
Right before Elliott's birthday I came across a blog about these cupcakes. Someone had actually mistaken her cupcakes for a slider. They were pretty disappointed that it wasn't real meat. I thought the whole thing looked pretty cool so I had to try it.

I made the two different kinds of cupcake and a few different colors of frosting, including red and yellow.
A little bit of green-colored coconut and some sesame seeds and it was finished.
